So far episode three seemed to be the biggest challenge for the GIBO contestants, and I have full sympathy for them. As I made my way through this recipe, it seemed to be getting further and further away from me! Here is the result…much smaller then they should be. I don’t think these biscuits would make the cut with Paul and Biddy!!
Lard, wild apple mint and wild garlic leaves!! If nothing else my pantry and use of new ingredients will be greatly expanded! Here goes week two, Dingle Pie. I have tried to find the history of the pie, which I think looks very similar to a Cornish pasty, but have had no luck! If anyone out there can enlighten me and The Simple Owl followers, feel free!
Here we go! Week one of my Great Irish Bake Off (GIBO) challenge and a regular blog post! For me, the most important thing about battenburg cake is the story! Some say the true origin of the cake is unknown. Of all the theories my favorite is the marriage of Queen Victoria’s granddaughter, Princess Victoria to Prince Louis of Battenberg. The four squares represented the four Battenberg Princes Louis, Alexander, Henry and Francis Joseph. Maybe I should have left the final photo to the end, but I could not wait to show you!
